Really Quick Pickled Daikon

1 lb radishes (white or purple), cut into 1/3 inch cubes
1/4 cup sugar
⅓ cup plus 1 tablespoon white vinegar
1 heaping tablespoon kosher salt
¾ cup water

Combine sugar, vinegar, kosher salt, and water in a bowl and mix until salt and sugar are almost completely dissolved.
Add the radish and stir a few times and transfer to an airtight container or a glass jar. Keep in the refrigerator at least 2 hours before serving.
Refrigerate up to 2 weeks.

Easy Sesame Dressing

Here’s the dressing we have been using for our sample at the market. It really is perfect for daikon. The rice vinegar is nice if you have it but other vinegars are fine too.

5 tablespoons olive oil, 2 tablespoons rice vinegar, 1 tablespoon soy sauce, 1 tablespoon sesame oil, 1 tablespoon sugar.
